In a small sauce pan, add spinach and add enough water to cover. Boil for 5 minutes and drain.
Use food processor or high powered blender to blend the spinach with the water until completely smooth and free of lumps. Set aside.
Cut deli slices into quarters. Add to medium sauce pan set to medium heat.
Add milk and stir continuously until cheese is completely melted and the mixture is completely smooth. Add a little more milk if you prefer a thinner queso.
Remove from heat and add taco seasoning and spinach and mix until blended.
Serve immediately.
