Ingredients
The eggs:
- 4 eggs
- 2 tbsp milk
- 1/4 tsp salt
- 2 grinds black pepper
- 1 tbsp / 15g butter
- 1 tbsp feta cheese
The arepas:
- 2 cups arepa flour (pre-cooked cornmeal)
- 1 1/2 tsp salt
- 2 1/4 cups warm water
Additional: More feta cheese and alfalfa will fill the arepa.
Preparation
- Start with the arepas. In a large mixing bowl, combine the pre-cooked cornmeal and salt. Slowly add warm water while mixing with your hands until a smooth dough forms. Divide the dough into 3-4 portions and shape them into balls.
- Flatten each ball into a patty about 1/2 to 3/4 inch thick.
- Heat a non-stick skillet or griddle over medium heat and add vegetable oil if desired. Cook the arepas for 5-6 minutes on each side until they develop a golden-brown crust.
- To make the eggs, start by whisking together the eggs, milk, salt, and pepper in a bowl until well combined.
- In a non-stick pan, melt butter over medium heat. Once the butter is melted, add the egg mixture to the pan.
- Using a rubber spatula or flat edge wooden spoon, gently run it back and forth across the pan and around the edges of the eggs. This will create soft folds in the eggs. For a creamier texture, you can add a splash of extra milk to the pan.
- Once the eggs are almost cooked to your desired consistency, remove the pan from the stove and continue to stir or fold the eggs for another 10 seconds or so until fully cooked.
- Serve the scrambled eggs inside the warm arepas for a delicious and satisfying meal.
- Fill the arepa with eggs, feta cheese, and your favorite toppings. Enjoy!
